Vegan Broccoli Cauliflower Soup

Quick, easy and healthy broccoli cauliflower soup, ready in 20 minutes. When I want a bowl of nourishing comfort, this is one of my go to’s. It’s vegan, paleo, and Whole 30 friendly, with no fats added. The consistency is silky and creamy, thanks to that beautiful zucchini added in.

Ingredients:

  • 4 cups chopped broccoli florettes

  • 4 cups chopped cauliflower

  • 1 medium zucchini - chopped

  • 1/2 teaspoon granulated garlic

  • 1 teaspoon Herbamare seasoned sea salt

Instructions:

Place vegetables and seasonings in a large soup pot.

Add enough water to come up to one inch below the top of the vegetables.

Bring to a boil, reduce heat to low, cover and simmer 20 minutes or until vegetables are tender. Puree soup in a blender ( I use an immersion blender to keep clean up easy and quick).

Voila! Taste and adjust salt to your liking. Serve with a dash of cayenne or a grind of fresh peppercorns if you like.
